Foil Packet Chicken Fajitas

One of my personal favorite recipes is foil packet chicken fajitas. To sum up, it's simple to prepare, easy to clean up, and packed with flavor.

Here's what you'll need:

- 4 boneless, skinless chicken breasts (we recommend Beck Ranch Meats)

- 1 bell pepper, sliced

- 1 onion, sliced

- 2 cloves garlic, minced

- 1 tbsp chili powder

- 1 tsp cumin

- Salt and pepper, to taste

- Olive oil

- Salsa, sour cream, shredded cheese, and flour tortillas (optional)

 

Instructions:

1. Preheat your campfire or grill to medium-high heat.

2. Cut 4 large squares of aluminum foil, about 12x12 inches each.

3. In a large bowl, toss the chicken, bell pepper, onion, garlic, chili powder, cumin, salt, and pepper until well coated.

4. Divide the chicken and vegetable mixture evenly among the four squares of foil.

5. Drizzle each packet with a little bit of olive oil.

6. Fold each packet tightly, so as to make sure that all of the ingredients are well-sealed inside.

7. Place the packets on the campfire or grill and cook for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.

8. Use tongs to carefully remove the foil packets from the heat.

9. Serve the chicken and vegetable mixture in flour tortillas, topped with salsa, sour cream, and shredded cheese, if desired. Enjoy your chicken fajita recipe!
